Recipe: Chocolate Brownies with Whipped Mascarpone Cheese and Cherries

SERVES:
makes one 9 x 13-inch pan

INGREDIENTS:
for the brownies:
10-ounces semi-sweet or bittersweet chocolate chips
2 sticks unsalted butter, cubed
2 cups sugar
2 tsp vanilla extract
5 large eggs
1 1/2 cups all-purpose flour
3 Tbs cocoa powder
1/2 tsp salt

one buttered 9 x 13-inch baking dish

one 8-ounce tub mascarpone cheese (see hints below)
2 Tbs sugar
1/4 cup heavy cream

pitted and sliced fresh cherries as needed
sugar to lightly toss with sliced cherries (optional)
chopped fresh mint to taste

PROCEDURE:

Get about 1-inch of water simmering in a large pot on the stovetop.

Add 10-ounces semi-sweet or bittersweet chocolate chips to a large stainless steel bowl and add 2 sticks of cubed unsalted butter to that and stir those around, over the double boiler, until everything has melted and is mixed together.

Just has it has melted together, take it off of the stove and add 2 cups sugar and whisk that in, add 2 tsp vanilla and 5 large eggs, one at a time, and whisk those in.

Add 1 1/2 cups all-purpose flour, 3 Tbs cocoa powder and 1/2 tsp salt, mix that together until combined. Then transfer it to a buttered 9 x 13-inch baking dish and place that onto the center rack of a 350 degree preheated oven.

That will take just about 20 - 22 minutes to bake (or possibly 2-3 minutes more) use a toothpick to check it for doneness.

Pit fresh cherries as needed and toss with a little sugar and fresh chopped mint to taste.

Once the brownies have cooled down, use an electric mixer to cream one 8-ounce tub mascarpone cheese with 2 Tbs sugar and 1/4 cup heavy cream, using the paddle attachment, NOT the whisk attachment.

Serve the cooled, cut brownies with a dollop of the mascarpone right on top and finish with a spoonful of pitted cherries tossed with a little sugar and fresh chopped mint.

HINTS:

Don't use the whisk attachment of the mixer, it can turn the cheese to a butter consistency.

Double the amount of mascarpone, sugar and cream to make enough to serve with the whole pan of brownies. Otherwise, enjoy some of the brownies plain, without mascarpone.

Substitute cream cheese for mascarpone, just add a Tbs or two more sugar when whipping with the paddle attachment.
