BU bakes giant muffin to celebrate bakery expansion

VESTAL, N.Y. -- Binghamton University students took a bite out of a giant snack. The university served a 30 pound blueberry muffin to students Tuesday.

The enormous muffin was baked to celebrate the grand opening of the Jazzman Deck in the Library Tower.

University officials say students have been asking them to expand the campus bakery for a while.

“Overwhelmingly students have told us that we needed a place in the center of campus in the library where they can come and relax and enjoy themselves that’s very convenient because we have a lot of convenient shoppers here on campus,” said Peter Napolitano, BU Director of Auxiliary Services.

The muffin is the largest ever created for Binghamton University. It contains five pounds of blueberries and took six hours to bake.
